Raw Cacao

For centuries, cacao has been used in Mexico and Central and South America for its medicinal and energizing properties. It is found in a number of forms, including whole beans, nibs and powder. Cacao nibs are made by removing the skin from the cacao bean and cracking it into pieces. Cacao powder is made by processing raw cacao beans through a cold-pressing process with the cacao fat removed.

In its raw, unprocessed state, cacao is one of the most nutrient-rich foods on the planet. All raw forms of cacao are abundant with vitamins and minerals that are necessary for good health, such as iron, calcium, potassium, zinc, phosphorous, vitamins A, B1, C, D and E, and other living enzymes. It is a source of antioxidant flavonoides which promote heart health and help our bodies eliminate toxins. Additionally, it is the highest whole food source of magnesium. Studies show that magnesium supports the heart, increases brainpower, relaxes menstrual cramping, relaxes muscles, increases flexibility, helps build strong bones and increases alkalinity. Raw cacao also helps to release neurotransmitters, such as serotonin. It stimulates the secretion of endorphins, which produce pleasurable sensations and phenylethylamine, a mood booster. Additionally, cacao releases anandamide which promotes elation. Because it is so nutritious, raw cacao is often referred to as a superfood.

Coconut Palm Sugar – A Low-Glycemic Sweetener

We use coconut palm sugar as our sweetener, which is a mineral-rich, low glycemic sweetener (GI-35) made from the nectar of the coconut palm tree. It has a considerably lower glycemic index (35) than agave (42), honey (55), and cane sugar (68). According to studies that have been conducted, coconut palm sugar contains significantly more potassium, magnesium, zinc, iron, phosphorous, nitrogen and sodium than brown or white sugar.
